Most shops and galleries stay open until 6, although if it's a summer weekend they may stay open longer. On the second Saturday of each month everyone stays open until 9. Key Food, the big grocery store in the middle of town, stays open until 9. I have been in a bar/restaurant in Beacon past midnight (gasp!) although I don't know how common it is for them to stay open that late!
